Mixed Zucchini Squash Casserole

 

  • 3 pounds mixed green and yellow zucchini, sliced
  • 1/2 cup onion, chopped
  • 1/2 cup butter
  • Salt and freshly milled pepper to taste
  • 2 eggs, beaten
  • 3/4 cup cracker crumbs or cracker meal
 

Method

Preheat oven to 350° F.

Steam zucchini for about 10 to 15 minutes or until tender.  Drain and mash with a potato masher.  Set aside.

Sauté onion in butter until translucent, but not caramelized. 

Mix together squash, onion, eggs, cracker crumbs, salt, and pepper to taste. Stir to combine.  Pour into a lightly greased 2-quart casserole.  

Bake, uncovered, at 350° F. for 20 minutes or until lightly browned.
