Arugula with Maple Dressing

 

  • 3 cups arugula
  • 2 cups curly endive
  • 2 cups radicchio
  • 4 teaspoons cider vinegar
  • 1 tablespoon maple syrup
  • 3/4 teaspoon Dijon mustard
  • 1/2 teaspoons grated orange zest
  • Salt and freshly milled pepper to taste
  • 3 tablespoons Extra-virgin olive oil
 

Method

Wash and dry arugula, endive, and radicchio (spin dry is best).  Rip by hand into bite-sized pieces. Put in a large serving bowl and set aside. 

Whisk together vinegar, maple syrup, mustard, orange zest, salt and pepper to taste. Drizzle in olive oil, whisking, until combined and slightly emulsified. Drizzle over greens and toss well to combine. These greens all have a penchant for the sweetness in maple syrup.

Serves: 8 to 10
