Carolina BBQ Potato Salad

"The vinegar--based barbecue sauce is crucial - don't use a thick, sweet one." Debbie Moose from her book, Potato Salad

      • 2 pounds new potatoes
      • 1 1/2 cups cooked pork barbecue
      • 1/2 cup vinegar-based barbecue sauce
      • 1/3 cup chopped onion
      • 1/2 cup chopped celery
      • 1/4 cup chopped fresh Italian parsley
 

Method

Place the potatoes in a large pot, add enough water to cover them, cover the pot with a lid, and bring to a boil.  Cook until the potatoes are pierced easily with the tip of a sharp knife, 15 to 20 minutes.  Drain and let cool until you can handle them.  Cut into quarters or halves, depending on the size of the potatoes.

In a large bowl, toss together the potatoes, barbecue, barbecue sauce, onion, and celery.  Cover and refrigerate for several hours or overnight.  Serve at room temperature.  When ready to serve, garnish with chopped parsley.

Serves: 6
