Layered Salad

This recipe is about beautiful presentation.  And we love Roger's trick with the peas so they don't roll out of the salad.

  • 1 head lettuce
  • 1 bag frozen peas
  • 1 cup salad dressing
  • small bottle bacon bits
  • 6 green onions
  • 6 hard boiled eggs
  • 1 cup mayonnaise
  • 1 cup shredded cheddar and mozzarella cheese

METHOD

Layer ingredients in serving bowl, starting with lettuce on bottom working to end with with cheese on top.

Mix peas with mayonnaise.  This will keep the peas from rolling out of the layers and maintain the beauty of the presentation.

Put in a layer of lettuce.  Follow this by spreading peas across the lettuce, then one third of the sliced green onions.  Repeat this process three times, ending with peas.

Finally, spread salad dressing over top.  Cut hard boiled eggs in half and arrange around the salad.  Sprinkle with cheese and bacon bits.  Keep cool until ready to eat.

I sometimes take half the cheese and mix in as I go with remaining for the top.

Serves: 4 to 6
