Glazed Mixed Holiday Veggies

Perfect at holiday time with turkey or with a gorgeous rib roast.

  • 2 cups turnips, peeled and cubed
  • 2 cups rutabagas, peeled and cubed
  • 2 cups sweet potatoes or yams, peeled and cubed
  • 2 cups winter squash, peeled and cubed
  • 3 tablespoons cider vinegar
  • 3 tablespoons dark corn syrup
  • 1 tablespoon butter or margarine, melted
  • 1/3 cup packed brown sugar
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons freshly grated ginger
  • 1/4 cup chopped walnuts, toasted

Method

Preheat oven to 400 °F.

Place vegetables in a large pot, cover with water, and cook about 20 minutes, or until tender, OR, steam over boiling water if you have a large steamer.  Drain well. Place in a lightly greased 7x11-inch baking dish.

In a small bowl, combine vinegar, syrup, butter, brown sugar, salt and ginger. Pour over vegetables, and toss to coat.

Bake in preheated 400°F oven for 20 minutes basting occasionally.  If you have made a roast or a turkey, it will be in the resting phase while this cooks.  Nice timing for those difficult holiday meals.  basting occasionally.

Stir, sprinkle with chopped nuts, and serve.
