Herbed Green Beans

From Shari's collection of old-fashioned recipes.  The old is new again.

  • 1 pound fresh green beans
  • 4 bacon slices
  • 2 tablespoons chopped green pepper
  • ½ cup chopped onion
  • 1 teaspoon salt or to taste
  • 2 tablespoons chopped parsley
  • 2 tablespoons sugar
  • 1/8 teaspoon marjoram
  • ½ teaspoon pepper
 

Method

Remove ends of beans; cut into 2 inch lengths.

Cut bacon crosswise into ¼ inch pieces. Cook in skillet until crisp. Remove bacon from skillet and drain on paper towels.

Place beans in medium saucepan; cover with boiling water. Add bacon drippings, green pepper, onion, and remaining ingredients.  Bring to a boil. When boiling, immediately lower heat to a simmer.  Cook for about 15 - 20 minutes or until beans are tender.

Serves 4.
