Cabbage and Fruit Salad

 

  • 1/4 cup pineapple juice
  • Juice of 1/2 lemon
  • Salt to taste
  • 1 tablespoon sugar
  • 1/2 cup sour cream
  • 2 cups cabbage (about 1/2 small head)
  • 1 apple
  • 1 tablespoon lemon juice
  • 1/2 cup raisins
 

Method

Whisk together fruit juices,salt, and sugar. Be sure sugar dissolves, then add sour cream.  Whisk until smooth.  Set aside.

Shred cabbage.  Do not peel apple, but cut in dice.  Sprinkle with 1 tablespoon of the lemon juice to prevent oxidation.

Toss cabbage, raisins, and apple with the dressing.  Let chill for an hour in refrigerator before serving.

Serves: 4
