Quick Asparagus Rolls

This asparagus recipe is elegant, but quick

      • 1 pound fresh asparagus
      • 1 package crescent roll dough
      • 1 cup Monterey Jack cheese, grated
      • One quarter cup real bacon bits
      • One quarter cup scallion, finely chopped with green part
 

Method

Preheat oven to 350°F.

Break off tough ends of the asparagus leaving just the tender tips. Asparagus will assist the cook by snapping off where they are inedible.  Throw away inedible  pieces, or save for vegetable soup stock.  Steam tips for several minutes until cooked tender but still a little crisp.

Open crescent roll dough and separate at the seams. Sprinkle each piece of dough with cheese, bacon bits and green onion.  Place one asparagus spear on top of all.

Roll and bake in preheated 350°F oven for 10 - 12 minutes or until rolls are browned. Slice and serve.
