Steamed Artichoke with Lemon Sauce

  • 6 medium fresh artichokes
  • 1 1/2 cups mayonnaise
  • 4 1/2 teaspoons lemon juice
  • 3/4 teaspoon seasoned salt or seasoning blend
  • 3 drops hot pepper sauce
 

Method

Fill a large bowl with water and the juice of the lemon.

Slice the stem from each artichoke to form a flat base so the artichoke can stand upright on a plate.  Discard the stem.  While working with one artichoke, place the others in the bowl of lemon water to prevent them from discoloring.

Holding it on its side, cut off the top third of the artichoke.  Pull back the outer leaves until they  break at the base.  Stop when you get to the pale green layers.    Repeat with remaining artichokes.

Place the artichokes upside down in a steamer basket. Put basket in a saucepan over 1 inch boiling water. Cover and steam for 25-35 minutes or until tender.

In a small bowl, combine the mayonnaise, lemon juice, salt and hot pepper sauce. Cover and refrigerate until serving with the steamed artichokes.

Yield: 6 servings.
