Sweet Potato and Orange Casserole

A lovely holiday dish - both Thanksgiving and Christmas.

  • 2 pounds sweet potatoes
  • 2 teaspoons grated orange peel
  • 3 oranges
  • Butter to grease baking dish
  • 1 tablespoon cornstarch
  • 1 cup orange juice
  • 3 tablespoons maple syrup
  • 1/8 teaspoon cloves
 


Method

Preheat oven to 375°F .

Cook sweet potatoes in water and drain. Set aside to cool. When cooled, peel potatoes and cut into 1/4 inch slices.

Grate orange peel. Set aside. Peel the oranges and cut the pulp into 1/4 inch slices. Mix with potato. Lightly butter a 9 x 13 inch baking dish. Add potatoes and orange.

In saucepan whisk together orange peel, cornstarch, orange juice, maple syrup and cloves. Cook over medium-low heat, whisking all the while until thick,

Pour over potatoes, bake in preheated 375°F oven for 15 minutes.
