Sweet Potatoes with Orange, Lime and Ginger

For the holidays, THanksgiving and Christmas, or for any day you want something special.
  • 1/3 cup all-purpose flour
  • 3 pounds sweet potatoes, peeled and thinly sliced
  • 1/4 cup butter
  • 1/3 cup packed light brown sugar
  • 1 tablespoon freshly grated lime zest
  • 2 tablespoons fresh lime juice
  • 1 tablespoon freshly grated grated orange zest
  • 2 tablespoons fresh orange juice
  • 1 tablespoon freshly grated peeled ginger
  • 1/2 cup water
  • Salt and freshly milled black pepper to taste
 

Method

Preheat oven to 425°F.

Toss potato slices with flour in a large mixing bowl. Toss gently, but well to distribute flour evenly as you don't want any pieces to get caked.  They will be gummy when cooked.

Melt butter in a small saucepan over low heat. Add sugar, lime and orange zest and juice, ginger, water, salt and pepper.  Over very low heat, cook gently until sugar dissolves, about 2 - 3 minutes. Watch carefully as you only want sugar to dissolve.

Put potato slices into shallow, lightly greased 2-quart casserole dish, shaking off any excess flour as you lay the slices in.  Pour liquid evenly over potato mixture.

Cover and bake in preheated 425f oven for 55 minutes or until tender. Let stand 10 minutes before serving.
