Method
Preheat oven to 375°F.
Boil sweet potatoes for 20-25 minutes, or until tender. Drain and set aside to cool.
When cool enough to work with, peel, then mash the pulp. Combine potatoes, butter, brown sugar, juice, bourbon,
salt and pie spice. Mix well. Spoon mixture into lightly greased 1 1/2 quart
baking dish. Sprinkle chopped pecans around edge of dish. Bake in preheated 375°F oven for 45 minutes.
Yield: 10 servings.
