Spanish Potatoes

      • 1 tablespoon minced onion
      • 2 tablespoons chopped green pepper
      • 2 tablespoons chopped pimiento
      • 4 tablespoons fat
      • 2 cups diced boiled potatoes
      • 1/2 cup chopped ham
      • 1 teaspoon salt
      • 1/2 teaspoon paprika 
 

Method

Saute onion, pepper and pimiento in fat until light brown.  Add potatoes, ham and seasonings and cook until heated through.

Serves 4.
