Verde Corn Queso Squares

    • 1/2 cup yellow corn meal
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon garlic powder
    • 1/4 teaspoon kosher salt
    • 1/4 cup unsalted butter, melted
    • 2 eggs, lightly beaten
    • 1/3 cup sour cream
    • 1 (14.75 oz.) can cream style corn
    • 1 (15.25 oz.) can whole kernel corn, drained
    • 1 (7 oz.) can diced green chilies
    • 1 cup shredded Colby-Jack cheese
    • 1 cup shredded sharp cheddar cheese

 

 

Method

Heat oven to 350 degrees. Spray an 11x7x2-inch baking dish with cooking spray. Set aside.

In a large mixing bowl, stir together first four ingredients. Whisk in melted butter, eggs, sour cream and cream style corn until well mixed. Stir in remaining ingredients. Pour into prepared dish.

Bake for 40-50 minutes until top is golden. Cut into squares to serve.

Serves 8.
