Cheesy Corn Cornbread

      • 2 cups of cornbread mix (not cornmeal, not Jiffy brand)
      • 1 can whole kernel corn, drained
      • 1 can creamed corn, drained lightly (not rinsed)
      • 1 cup sour cream
      • 1 cup heavy cream
      • ½ stick of unsalted butter, melted
      • 2 cups shredded cheese (cheddar or Colby jack)
      • 1 cup jalapeno peppers (optional)
 

Method

Combine all ingredients in a large bowl.  Reserve 1/3 of the cheese for the top of the mixture. 

Pour mixture into a greased 9 x 13 baking dish and bake at 350 degrees for 45 minutes or until toothpick inserted comes out clean. 

Serves 8-10.
