Why
do we think that we can only use radish raw? This soup alters that idea.
Radish is delicious with spinach and shrimp.
42 ounces chicken broth
1/2 teaspoon ground ginger
2 1/2 tablespoons brown sugar
1/2 teaspoon white pepper
1/2 to 3/4 teaspoon cayenne
pepper
1/4 to 1/2 cup rice wine
vinegar
2 cups sliced scallions
2 1/2 cups sliced radishes
2 to 2 1/2 cups shredded
spinach leaves
1 pound raw, de-veined shrimp,
halved
1/2 cup enoki or shitaki
mushrooms sliced for garnish
METHOD
in a large soup kettle,
bring broth to a boil. Stir in ginger, sugar, pepper, cayenne and vinegar.
Stir in scallions, radishes and spinach. Bring to a strong simmer, and
cook about 5 minutes
