Summer Blueberry Soup

Blueberries mean summer. Cold soups are a great way to get that wonderful nutrition from blueberries.

  • 1 1/2 cup fresh blueberries or frozen blueberries, thawed with juice
  • 1/2 cup water
  • 1/4 cup sugar
  • 1 tablespoon lemon juice
  • 1/4 teaspoon ground coriander
  • 1/8 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
  • 1 tablespoon Cabernet wine
  • 1/3 cup yogurt
  • 1/3 cup sour cream

 

 

METHOD

In blender or processor, puree blueberries and water. Transfer to a small saucepan.

Add sugar, lemon juice, coriander, cinnamon, and cloves, and stir well.

Bring just to the boil, stirring constantly.

Reduce heat. Cover and simmer for 5 minutes. . Refrigerate until cool. Stir in wine.

Stir in yogurt and sour cream until well blended. Cover and refrigerate until well-chilled.

Serves: 4
