Irish Cabbage Soup

The simplest of ingredients, made delicious by bacon. Irish bacon is a gourmet treat. Please buy the best brand of bacon for this recipe.

  • 6 sprigs parsley
  • 1 bay leaf
  • 5 slices thick-cut bacon, diced
  • 2 medium onions, sliced
  • 1 turnip, sliced
  • 2 carrots, diced
  • 2 potatoes, in 3/4 inch cubes
  • 1 head green cabbage, shredded
  • 6 cups chicken stock

 

 

METHOD

Tie parsley and bay leaf together or put in cheesecloth. This is a bouquet garni.

In a heavy 6 quart saucepan or Dutch oven, cook bacon until crisp. Remove with a slotted spoon.

Put remaining ingredients, except for salt and pepper, in pot. Bring to a boil. When boiling, lower heat to medium-low and simmer, partially covered, for 1 to 1-1/2 hours or until all ingredients have softened.

Season with salt and pepper to taste.

Pour into hot soup bowls and garnish with reserved bacon.

Serves: 4 - 6
