Quick Super Bowl Taco Recipe

A last minute arrival of a few extra guests?  Just at kick-off time?  Try this solution.

 

  • 1 1/2 pounds ground beef
  • 1 medium chopped onion
  • 1 can refried beans
  • 1 small jar Hot picante sauce
  • 1 package taco seasoning mix
  • 1 (16 oz.) sour cream
  • 1 (12 oz.) package shredded cheddar cheese

 

 

METHOD

Preheat oven to 350°F.

In large pan fry ground beef and onion.  When cooked, drain fat. Stir in refried beans, sauce and seasoning mix.

In a 2 quart casserole dish spread half the meat on bottom.  Follow with half the sour cream then half the shredded cheese.  Repeat the process ending with cheese on top.

Bake in preheated 350°F. oven for 20 minutes.

Serve with tortilla chips.

Note:  This is medium spicy.  For more heat, add a few chopped jalapeno's when frying ground beef.
