English Pea Soup - Diabetic

  • 1 (10 oz) package frozen peas
  • 2 teaspoons chicken-flavored bouillon granules
  • 1/4 medium head romaine lettuce
  • 3 oz fresh spinach leaves
  • 1/4 cup green onions, chopped
  • 3 oz fresh chervil
  • 1/8 teaspoon pepper
  • 1-1/4 cup water
  • 1/4 cup skim milk
 

Method

Combine English peas, lettuce, spinach, green onions, bouillon granules, chervil and pepper in a large saucepan.  Stir in water. Cover and bring to a boil. When boiling, reduce heat to medium-low, and simmer 20 minutes. Process mixture in food processor, then return to saucepan, and stir in milk. Cook over medium heat, stirring frequently, until thoroughly heated.

Serves: 8
