Cold Pear & Berry Soup

Chilled Soups are the most refreshing on a hot day.

  • 6 ripe pears, peeled, cored and chopped
  • 1 1/3 cups fresh raspberries
  • 1/2 teaspoon cinnamon
  • 3 cups cranberry-raspberry drink
 

Method

Set 6 - 8 raspberries aside, the number determined by the number of people you are serving.  Puree the fruits and cinnamon in a food processor.  Pour in the cranberry-raspberry drink and continue to process until blended. 

Put in refrigerator to chill.  If you work with cold beverage, the chilling time will be brief.   When ready to serve, garnish with one raspberry per cup.

Serves: 6 - 8
