Turkey Bone Broth

Using chicken broth gives depth to the soup.

  • Turkey carcass and bones from leftover turkey

  • 2 carrots, roughly chopped
  • 1 celery rib with leaves,roughly chopped
  • 1 onion roughly chopped
  • 2 small cloves garlic, cut in half
  • 6 stalks parsley (keep stems)
  • 1 teaspoon peppercorns
  • 1 large bay leaf or 2 small
  • Water or chicken broth
 

Method

Always save turkey bones from a leftover turkey for making broth or soup.

Put all turkey bones in a large pot. Add remaining ingredients and cover with 2 quarts water or chicken stock.  You can combine water and stock if you don't have enough stock - no harm done. 

Bring liquid to a boil.  When boiling, immediately lower heat to produce a strong simmer.  Cook, partly covered, for 2 hours, skimming occasionally. Strain and let boil down to one quart.
