Always save turkey bones from a leftover turkey for making broth or soup.
Put all turkey bones in a large pot. Add remaining ingredients and cover with 2
quarts water or chicken stock. You can combine water and stock if you don't have enough stock - no harm done.
Bring liquid to a boil. When boiling, immediately lower heat to produce a strong simmer. Cook, partly covered, for 2 hours, skimming occasionally. Strain and let boil down to one quart.
