Jhinga Kari

This is an Indian dish

  • 2 tablespoons butter fat
  • 2 pounds. fresh mushrooms, sliced
  • 6 tomatoes, peeled and cut in wedges
  • 4 medium onions, chopped
  • Small piece of ginger
  • 4 teaspoon dried sage
  • 2 teaspoons turmeric
  • 2 teaspoons salt
  • 1/2 teaspoon chili powder
  • 3  pounds shrimp, shelled and deveined
  • 1 cup fresh peas
  • 2 tablespoons lemon juice
  • 2 teaspoons garam masala
 

Method

Heat butter in pan. Fry onions with ginger and sage gently for 5 minutes.  Add turmeric, salt and chili powder. Allow to sizzle for a minute or two. Add mushrooms and tomatoes and cook over medium heat  for 5 minutes. Stir in peas, shrimp, garam-masala and lemon juice and simmer covered for 10 minutes

Serves 6-8
