Fiesta Fruit and Shrimp Cocktail

  • 1 pound peeled medium shrimp, cooked
  • 1 mango, peeled and cut into small dice
  • 1/2 cup canned black beans, rinsed and drained
  • 1 green onion, minced
  • 1 tablespoon snipped cilantro
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1/4 cup mango nectar
  • 1 tablespoon chopped chipotle pepper in adobo sauce
  • 1 clove garlic, crushed
  • 1/2 teaspoon lime zest
  • garnish- toasted pine nuts
 

Method

In a large bowl place the shrimp, mango, beans, onion and cilantro. In a small bowl whisk together the rest of the ingredients till well blended; add to the shrimp mixture and stir till well combined. Cover and refrigerate 1 hour.

To serve divide the shrimp mixture among 4 martini or wide mouthed champagne glasses. Garnish with the pine nuts.

Serves: 4
