Cornmeal Crusted Goat Cheese with Fire Roasted Tomato & Shrimp Salsa

Ingredients for goat cheese:

  • 1 whole egg, slightly beaten
  • 1/2 cup whole milk
  • 1-1/2 cups yellow cornmeal
  • 1 teaspoon ground red pepper
  • 1 teaspoon fine sea salt
  • 6 ounces soft goat cheese
  • 2 teaspoons adobo sauce from canned chipotle chiles
  • 2 teaspoons corn oil

Ingredients for warm salsa:

  • 1 (14-1/2 oz) can diced fire roasted tomatoes
  • 1/3 cup chopped sweet white onion in tomatoes
  • 1 cup chopped, cooked shrimp
  • 2 tablespoons freshly chopped flat leaf parsley

 

 

Method

Whisk together the eggs and milk, set aside.

In a separate bowl, stir together the corn meal, pepper and salt; set aside.

Knead adobo sauce into goat cheese and form "patties".  Chill for 10 minutes. Dredge in egg mixture then coat with corn meal. Chill an additional 10 minutes.

Heat corn oil in a heavy skillet (medium-high heat) and fry cheese patties until golden brown.

Meanwhile, heat the tomatoes in microwave. Add them raw to onion/tomatoes and stir in shrimp. Divide between six small dessert or cereal bowls and sprinkle with parsley. Place one fried goat cheese in the center of each bowl.

Yield: 6 servings
