Baked Lobster

 

  • 4 cups lobster meat cut in bite-sized (1") pieces
  • 1/2 cup lime juice
  • 10 tablespoons butter, unsalted
  • 2 medium onions, finely chopped
  • 2 garlic cloves, finely chopped
  • 1/4 cup red bell pepper, chopped
  • 1 1/2 cups bread crumbs
  • Salt and freshly milled pepper to taste
  • 2 tablespoons Worcestershire sauce
  • Lime wedges to garnish
 

Method

Preheat oven to 350°F. 

Mix lobster with lime juice and set aside 15 minutes. Heat 8 tablespoons butter, saute onions lightly with garlic and peppers until tender but not browned. Add 1 cup bread crumbs, cook, stirring, until crumbs are golden.

Stir in lobster and lime juice mixture, season to taste with salt, pepper, and Worcestershire sauce. Pour into 1 quart souffle dish. Top with remaining breadcrumbs and dot with extra butter.

Bake in preheated oven for 30 minutes, until the top is golden brown. Garnish with lime wedges.
