Chick Peas Puerto Rican Style

These chick peas (garbanzo beans) are typical of Criollo cooking in Puerto Rico.

  • i pound chick peas
  • 1/4 head cabbage
  • 1 clove garlic, mashed
  • 1/2 pound pumpkin, peeled and chopped
  • 1 onion, chopped
  • 1 small green pepper, chopped
  • Salt to taste
  • 1/4 cup tomato sauce
  • 1/4 cup olive oil
  • 2 tablespoons vinegar
 

Method

Let chick peas soak overnight.  The next day drain the beans and put them in a pot with 2 1/2 quarts water.  Bring to a boil.  When boiling, lower heat and stir in cabbage, garlic, pumpkin, onion, tomato and green pepper.  Lower heat and cook at a rolling simmer for 1 1/2 - 2 hours or until beans are soft.

Whisk together the salt,tomato sauce, olive oil, and vinegar.  Drain beans and toss dressing over them.

Serves: 6
