Caribbean Coleslaw

Not native to the Caribbean, the cabbage has nonetheless traveled the world in the form of coleslaw, adapting to the imagination of the cook. 

  • 1/2 head cabbage, shredded
  • 1 cucumber, pared and finely sliced
  • 1 green pepper, seeded and finely sliced
  • 3 red onions peeled and finely sliced
  • 5 radishes, finely sliced
  • 1 large avocado, peeled and finely sliced
  • 1/2 cup olive oil
  • 1/4 cup vinegar
  • 1/4 teaspoon lime juice
  • Salt and freshly milled pepper to taste
 

Method

Put all vegetables in a large bowl.  Working as gently as possible, mix together. The avocado will soften, not stay in slices, but if you toss the vegetables gently, their flavor will be diffused throughout.

Whisk together the olive oil, vinegar, lime juice salt and pepper to taste.  Toss salad with dressing and refrigerate.

Serves: 6
