Turkey Melts with Apple Pepper Relish

Use the turkey leftovers from Thanksgiving or Christmas Holiday meal.

Relish

  • 3/4 cup chopped apple
  • 3/4 cup chopped roasted red bell pepper, drained
  • 1/4 cup sliced green onions
  • 1 tablespoon red wine vinegar
  • 1 tablespoon olive or vegetable oil
  • 1/8 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 1/4 teaspoon finely chopped fresh garlic

Sandwich

  • 4 large slices French bread or Italian bread, lightly toasted
  • 8 teaspoons mayonnaise
  • 12 ounces thinly sliced cooked turkey breast
  • 12 slices cheddar cheese
 

Method

Stir together all relish ingredients in medium bowl.  Set aside.

Place bread slices on baking sheet; spread each evenly with mayonnaise.

To assemble each sandwich, layer bread slice with 1/4 turkey, 1/4 cup relish and 3 slices cheese.

Heat broiler. Broil sandwiches 5 to 6 inches from heat until cheese is melted (1 to 2 minutes). Top with remaining relish.

Serves: 4 .
