In a medium bowl, combine lime juice and zest, soy sauce, onions, cilantro, peanut butter, sugar,
ginger root, garlic and pepper flakes. Stir to combine sauce well.
Spread each tortilla with sauce.
Layer each with 4 ounces sliced turkey. Evenly sprinkle each with onion, lettuce and cilantro.
Roll up tightly and cut on the diagonal. If you want to cut these into small slices and use as an appetizer, you may need to secure the slices with a toothpick. Easier to eat that way as well. Serve chilled.
