Leftover Turkey & Black Bean Quesadillas
Use the turkey leftovers from Thanksgiving or Christmas Holiday meal.
Quesadillas
- 1/2 cup green or red salsa
- 1 (15-ounce) can black beans, rinsed, drained
- 1/2 pound shaved deli turkey breast, or leftovers cut into strips
- 8 slices (3/4-ounce each) Muenster cheese, cut into strips
- 8 (8-inch) flour tortillas
- 2 tablespoons butter or margarine, melted
Toppings
- Sour cream, if desired
- Green or red salsa, if desired
