Turkey-Apple Quesadillas

Use the turkey leftovers from Thanksgiving or Christmas Holiday meal.

  • 1/4 cup sweet honey mustard
  • 4 (8-inch) flour tortillas
  • 4 slices deli smoked turkey
  • 28 (1/8-inch) tart apple slices
  • 6 slices (3/4-ounce each) Monterey Jack or cheddar cheese
  • 2 tablespoons butter or margarine, melted
 

Method

 

Spread 1 tablespoon mustard on one side of each tortilla. Layer one tortilla with one slice turkey, apple slices and 3 slices cheese. Cover with one tortilla. Repeat making these packets with remaining tortillas.

Brush melted butter on both sides of each quesadilla.

Heat 10-inch skillet or griddle. Grill quesadilla over medium heat, turning once, until cheese is melted.  The quesadilla will brown lightly.  Repeat until all quesadilla are cooked.You can serve them whole, but they are best when cut into wedges. A great appetizer
