Blazin' Cajuns (Wings)

This easy recipe will make hungry sports fans dance the Cajun two-step.  Use a low-salt or salt-free Cajun seasoning, if you can find it."

  • 1/4 cup hot sauce (such as Tabasco or Crystal)
  • 2 tablespoons vegetable oil
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped garlic
  • 1/4 teaspoon salt
  • 12 wings, cut in half at joints, wing tips removed and discarded
  • 2 tablespoons low-salt or salt-free Cajun seasoning mix
 

Method

In a small bowl, stir together the hot sauce, vegetable oil, lemon juice, garlic, and salt.  Place the wings in a resealable plastic bag.  Pour in the hot sauce mixture and shake to cover the wings.  Refrigerate for 2 hours or as long as overnight.

Preheat the oven to 400°F.  Cover a rimmed baking sheet with foil and spray the foil with nonstick cooking spray.  Remove the wings from the marinade, letting the marinade drip off, and put the wings in a bowl.  Discard the marinade.  Sprinkle the Cajun seasoning over the wings and toss to coat.

Place the wings on the baking sheet.  Roast for 20 to 30 minutes or until done.

Makes 24 pieces
