Old-Fashioned Mac & Cheese

Sometimes only the classic will do.

  • 8 ounces elbow macaroni, cooked
  • 4 cups (16 ounces) shredded Cheddar cheese, divided
  • 2 large eggs
  • 1 1/2 cups milk
  • 3/4 teaspoon salt or to taste
  • 1/4 teaspoon pepper or to taste
  • Paprika to give color to top
 

Method

Preheat oven to 350°F.

Lightly grease a 2-quart baking dish.  Layer in one-third of macaroni and sprinkle with 1 1/2 cups cheese. Repeat layer again.  Top with remaining macaroni. Reserve remaining 1 cup cheese.

Whisk together eggs, milk, salt and pepper until blended.  Pour mixture over the macaroni.

Bake, covered, at 350°F for 45 minutes or until thoroughly heated.

Uncover and sprinkle with remaining cheese, then top with a good sprinkling of paprika to give color. Cover again.  Allow to stand 10 minutes before serving.

Serves 8
