Crispy Corn Dogs

  • 10 frankfurters

  • 1 cup flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoon yellow cornmeal
  • 3 tablespoon shortening
  • 1 egg, beaten
  • 3/4 cup milk
  • Oil or shortening for frying

Method

In  medium bowl, mix flour, cornmeal, sugar, baking powder and salt.

Using a pastry blender , cut 2 tablespoons of shortening into the mixture until it looks like oatmeal flakes.

In a separate bowl, combine the egg and milk. Add to dry mixture and combine well.

Pat frankfurters dry with paper towels.   Dip franks into batter coat all sides. Use a pair of tongs to do this as you don't want to pierce the frankfurters.  Don't coat the franks too heavily as you want light crisp crustiness.

Drop 1 or 2 at a time into hot oil in mini-fryer. Fry until golden, about 1 minute on each side. Insert wooden skewer in end of each. Serve hot, with mustard, if desired.
