Method
Preheat oven to 375°F . Line cookie sheets with parchment paper.
Using a food processor, combine sugar and potato starch and process until sugar is finely ground. Put in softened margarine and spices. Process to combine well, then put in egg yolks and orange juice. Process, pulsing, until blended.
Add matzo flour and pulse until perfectly combined.
The mixture should now be dough-like.
Remove dough and shape into balls, 1 1/4" in diameter. Roll each ball in sugar and put on prepared cookie sheets. Press down on the the balls with a spatula to flatten into
cookies about 1/8" thick.
Bake in preheated oven on
middle shelf for about 15 minutes, or until golden brown. Slide the cookies, still on the parchment onto wire racks to cool.
