Sweet Pineapple Kugel

Sweet noodle pudding - kugel is a treat.
  • 1 pound broad noodles, cooked and drained
  • 1-1/2 pints sour cream
  • 1-1/2  cups butter, melted
  • 1-1/2  cups sugar
  • 1 teaspoon vanilla
  • 5 eggs, beaten
  • 1 pound  crushed pineapple, well drained
  • 4 ounces dried apricot or peaches, diced
  • Cinnamon sugar   
 

Method

Preheat the oven to 350°F.  Grease a 9 x 13 inch-pan.

In a large pot, bring at least 4 quarts of water to a boil over high heat, add salt, and cook the noodles until done, but still firm to the bite.  The time will depend on the noodles; see package directions.

While pasta is cooking, combine all other ingredients except cinnamon sugar in a large bowl.  

Drain the cooked noodles and add to this mixture.  Mix well. Pour into prepared pan and sprinkle with cinnamon sugar.

Bake in preheated 350°F oven for 45 minutes.
