Cheese Pie with Filo Pastry (Shavuot Recipe)

  • 1 cup (250 ml) heavy cream
  • 1/3 cup parmesan cheese (or more - to taste)
  • 1 pound feta cheese
  • 4 eggs, lightly beaten
  • Salt and freshly milled pepper to taste
  • 1/4 cup butter, melted for brushing on filo
  • 2 cups chopped, cooked spinach
  • Filo pastry
 

Preheat oven to 375* F/180*C.

Mix together the heavy cream and the parmesan cheese.  Crumble the feta, add cream/parmesan mixture and eggs.  Stir to combine.  Add the spinach, continuing to stir. Season with salt and pepper to taste.

Lightly coat a  large baking dish (about 9x13x2 in. or 240x345x50 mm) with oil.  Lay in about 6 sheets of filo, buttered with a brush. Pour in the stuffing and continue with the rest of the filo sheets . Trim the edges by pressing the filo down.  Bake in a preheated 360* F/180*C oven until the top sheet is dark brown, about 30 - 40 minutes. Let cool and cut to squares. 

Optional - after you butter the filo with a brush, you may fill and fold it in anyway you like, then place in oven dish.
