Spinach or Beetroot leaf Mahmoosa ( Eggs in beetroot leaves)

This is a kosher recipe from the Indian-Jewish Cuisine

  • 3 tablespoons oil
  • 2 tablespoons finely grated ginger-garlic
  • 1 onion, finely chopped
  • 2 cups beetroot leaves or spinach, cleaned and coarsely chopped
  • 2 large eggs, beaten
  • 2 tablespoons curry powder
  • 1 teaspoon salt
 

Method

Heat the oil and add the grated ginger and garlic and onion.

Cook for 5 minutes and add in the leaves.

Beat the eggs with the curry powder and salt.

Stir into the leaves and cook till set.

Serves: 3 - 4
