Palak Paneer - Indian Creamed Spinach with Cheese

This is a recipe from the north of India.

  • 2 bunches fresh spinach trimmed and cut into small pieces. (This does not taste the same with frozen spinach)
  • 3 tablespoons yogurt
  • 3 tablespoons cooking oil
  • 1/2 pound paneer cut into medium cubes
  • 1 teaspoon cumin seed
  • 1 onion finely chopped
  • 2 cloves garlic finely chopped (optional)
  • 1 teaspoon cumin-coriander powder
  • 2 tomatoes diced
  • 1 cup heavy cream
  • Salt to taste
  • 1 teaspoon garam masala
 

METHOD

Add 3-4 tablespoon water with the spinach in a bowl and microwave for 1-2 minutes, until the spinach is wilted.

Puree into a fine paste with the yogurt and set aside.

In a little oil, fry the paneer cubes till lightly browned. (This is optional).

Heat oil in a pot and heat the cumin seeds and sizzle.  Add the onion and garlicsaute till transparent.  Add the cumin-coriander powder with the tomatoes and cook till soft and well blended.  Add the spinach mixture and cook till the color changes to a dull green.  Add the paneer cubes and cook for 5 minutes, stir in the heavy cream with salt and cook for 2-3 minutes more.

Remove from the heat and sprinkle with garam masala.

Serves: 4 - 6
