Tofu Vegetable Stir-Fry

This is nutritionally packed. As it stands it is a healthy meal, loaded with vitamins, but If you use brown rice instead of white, you will enrich the meal even more and add lots of fiber and those important B vitamins.

  • 1-2 tablespoons peanut oil
  • 1 small onion, sliced
  • 2 teaspoons grated fresh ginger
  • 2 large cloves garlic, minced
  • 1 medium red pepper, seeded and julienned
  • 1 large carrot, julienned
  • 2 medium zucchinis, julienned
  • 8 ounces broccoli florets
  • 1/2 pound snow peas, cut on the bias in 1/2 inch pieces
  • 5 scallions, thinly sliced, green included
  • 2 teaspoons tamari soy sauce
  • 1/2 tablespoon oyster sauce
 

METHOD

Heat a wok or a heavy until very hot. Swirl in peanut oil.

Stir in onion and cook, stirring, for 2 minutes. Stir in ginger, garlic and vegetables. Stir-fry for about 5 minutes or until vegetables have softened but retain their color. Stir in tamari and oyster sauce.

Serve over rice.

Serves: 4
