Tofu Vegetable Stir-Fry
This is nutritionally packed. As it stands it is a healthy meal, loaded with vitamins, but If you use brown rice instead of white, you will enrich the meal even more and add lots of fiber and those important B vitamins.
- 1-2 tablespoons peanut oil
- 1 small onion, sliced
- 2 teaspoons grated fresh ginger
- 2 large cloves garlic, minced
- 1 medium red pepper, seeded and julienned
- 1 large carrot, julienned
- 2 medium zucchinis, julienned
- 8 ounces broccoli florets
- 1/2 pound snow peas, cut on the bias in 1/2 inch pieces
- 5 scallions, thinly sliced, green included
- 2 teaspoons tamari soy sauce
- 1/2 tablespoon oyster sauce
