Spicy Tofu with Orange & Snow Peas

Mirin is a sweet Japanese cooking wine. If you can't find it, substitute sherry wine sweetened with 2 teaspoons sugar.

  • 2 tablespoons cornstarch
  • 1 cup vegetable broth
  • 1/4 cup soy sauce
  • 1/4 cup mirin
  • 1/4 cup orange marmalade
  • 1/2 teaspoon crushed red pepper flakes
  • 3 - 4 tablespoons peanut oil
  • 1/2 pound snow peas, cut on the diagonal in 1/2 inch pieces
  • 1 pound tofu, cut in strips
  • 2 tablespoons orange zest
  • 1 teaspoon grated ginger

 

 

METHOD

In medium bowl combine cornstarch, broth, soy sauce, mirin, marmalade and pepper flakes. Set aside.

Heat a wok or skillet until very hot. When hot, swirl in oil and heat almost to the smoking point. Stir in snow peas. Stir-fry for two minutes. Add tofu in three batches and stir fry each batch until golden.

Stir in orange zest, garlic, and ginger. Stir fry 1 minute. Stir in reserved cornstarch mixture, and allow to reach a boil. Stirring constantly, cook over medium heat about 1 to 2 minutes.

Serve with rice. Brown rice adds vitamins and fiber for those who are health conscious.
