Baked Beans for a Crowd

By request, Roger made this for his dughter's wedding.  It serves 200 as written and can be easily cut in half. Great for a back yard party.

  • 10 gallons pork and beans
  • 10 1/2 cups of brown sugar 9 roughly 5 1/2 lbs
  • 10 1/2 cups ketchup
  • 10 onions peeled and chopped
  • 5-lbs bacon - Reserve bacon drippings
  • 3/4 to 1 cup liquid smoke ( taste after the 3/4 cup that isn't to smokey
  • 4 cups bacon drippings
  • Salt & Pepper
  • Red Hot Sauce (optional, but 4 - 5 shakes if you like kick)
 

Method

Cook the bacon in as many large sute pans as you have available.  Alternatively, cook in batches, but be sure to reserve the fat. If you cook in batches, you will want to have a saucepan available to hold the hot fat as each batch cooks.  Be sure to put it in an out-of-the-way spot as hot fats can give third degree burns.

Bake in preheated 350°F oven for 1 1/2 to 2 hours.  Roger found a commercial oven for this.  Community centers often provide them.
