Spicy Black Bean and Avocado Salad

Presentation is all when it comes to making kids eat healthy food.Since cilantro is a love-it or hate-it herb, she puts the cilantro in a dish on the side.

  • 2 (15 ounce) cans black beans, rinsed and drained
  • 3/4 cup diced red bell pepper
  • 3/4 cup diced red onion
  • 2 cups cooked corn kernels
  • 4 ounces feta cheese
  • 1 tablespoon minced, seeded jalapeno pepper
  • Grated zest of 1 lime
  • Juice of 1 lime
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • Salt to taste
  • 1/4 cup fresh chopped cilantro
  • 1/2 avocado per person
 

METHOD

Put black beans in a large serving bowl. Mix in red pepper, onion and corn. Crumble in 3 ounces of feta cheese, reserving last ounce to garnish.

Wearing rubber gloves, seed and mince jalapeno . Mix with lime zest, lime juice, olive oil and vinegar. Mix well. Pour dressing over beans and toss. Season with salt to taste. If you are not keeping the cilantro on the side, add to salad with dressing.

Peel and pit avocados. Place on a piece of lettuce on individual plates. Letting beans spill around the avocado, fill the avocado hollow with salad.

Garnish with remaining ounce of feta cheese.

Serves 4 - 6

Tortilla chips go well with this dish. You can place a ring of chips around the avocado. This is particularly enticing to children.
