METHOD
Put ham hocks and water
in a large kettle. Simmer for two hours, covered. Skim frequently to remove
scum.
Put garlic cloves in
a cheesecloth bag. Add with lima beans, salt and onion to the water. Simmer
over low heat for 1 1/2 hours.
When finished, drain
beans. Discard garlic cloves and onion. Grate a liberal amount of black
pepper over beans. Sprinkle paprika over top for color.
