Southern Lima Beans

Ham and lima beans are staples of southern cooking.

  • 2 medium ham hocks
  • 5 cups water
  • 2 garlic cloves
  • 1 cup dried lima beans
  • 1 teaspoon salt
  • 1 large onion, left whole
  • Freshly milled black pepper
  • 1/2 teaspoon paprika
 

METHOD

Put ham hocks and water in a large kettle. Simmer for two hours, covered. Skim frequently to remove scum.

Put garlic cloves in a cheesecloth bag. Add with lima beans, salt and onion to the water. Simmer over low heat for 1 1/2 hours.

When finished, drain beans. Discard garlic cloves and onion. Grate a liberal amount of black pepper over beans. Sprinkle paprika over top for color.

Serves 6 - 8
