Cary's Almost Easy Baked Beans

"My brother-in-law's family used to have a grocery store, Kamp's, that was an Oklahoma State Historical Monument. Cary made the best baked beans to sell at the store. Try this and you'll never use another recipe." Jane Marie

  • 1/4 cup yellow mustard
  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 1/4 cup distilled vinegar
  • 1 gallon quality canned baked beans
  • 3/4 cup onion, diced (about 1 large)
  • 3/4 cup green bell pepper, diced (about 1 large
  • 1/2 - 3/4 pound bacon strips (optional)

 

 

METHOD

Preheat oven to 325°F.

In a medium bowl make a sauce by mixing together mustard, ketchup, and brown sugar. When mixed, sprinkle with vinegar. Taste for sweet and sour. Add more vinegar to give tang, or more sugar to sweeten, according to taste. Set aside.

In very large bowl, stir together beans, onion, green pepper and reserved sauce. Pour into 2 large (or 1 very large, if you have it) baking dishes. Top with strips of bacon.

Bake in preheated 325° F for 30 - 40 minutes.

Yield: 32 servings of 4 ounces each
