METHOD
Preheat oven to 325°F.
In a medium bowl make
a sauce by mixing together mustard, ketchup, and brown sugar. When mixed,
sprinkle with vinegar. Taste for sweet and sour. Add more vinegar to give
tang, or more sugar to sweeten, according to taste. Set aside.
In very large bowl, stir
together beans, onion, green pepper and reserved sauce. Pour into 2 large
(or 1 very large, if you have it) baking dishes. Top with strips of bacon.
Bake in preheated 325°
F for 30 - 40 minutes.
Yield: 32 servings of
4 ounces each
