Caribbean Quinoa

Maximum nutrition, minimum  preparation - done in thirty minutes

  • 1 cup quinoa
  • 2 cups water
  • 4 green onions, chopped
  • 2 mangoes, diced
  • 1/4 cup sliced almonds
  • 1/4 cup dried cranberries
  • 3 tablespoons fresh cilantro, chopped
  • 1 lime, juiced
  • 1 cup white balsamic vinegar
  • Salt and pepper to taste
 

Method

Rinse and drain quinoa.  Toast  quinoa in a hot empty pan for about 5 minutes.  Add 2 cups water.  Bring to a boil, cover, and simmer over medium heat about 15 minutes until all water is absorbed.  Let quinoa cool.  Gently stir remaining ingredients into quinoa.  Serve as a room temperature or cold salad. 

Serves: 6.
