Method
Heat the oil in a medium-size non-stick saute pan. Stir in scallions and
tomatoes and cook for about 3 minutes, stirring. Remove from heat and keep warm.
In a medium-size saucepan, combine the remaining ingredients except the
couscous and parsley. Bring to a boil and add couscous. Cover and let stand 5 minutes, until liquid is
absorbed. Add tomato/scallion mixture and the parsley. and fluff with a fork.
Serves: 3 - 4 as side dish
