Spicy Couscous

  • 1 tablespoon olive oil
  • 2 scallions, chopped
  • 2 small tomatoes, chopped
  • 1 cup chicken broth
  • 1 teaspoon ground cumin
  • Salt to taste
  • 1 teaspoon curry powder
  • 1/8 teaspoon ground cinnamon
  • 1 cup couscous
  • 1/4 cup fresh parsley
 

Method

Heat the oil in a medium-size non-stick saute pan. Stir in scallions and tomatoes and cook for about 3 minutes, stirring. Remove from heat and keep warm.

In a medium-size saucepan, combine the remaining ingredients except the couscous and parsley. Bring to a boil and add couscous.  Cover and let stand 5 minutes, until liquid is absorbed. Add tomato/scallion mixture and the parsley.  and fluff with a fork.

Serves: 3 - 4 as side dish
