Fresh Tuna with Lemon Caper Sauce

This lemon-caper sauce is subtle and brings out the flavor of fresh tuna.

  • 2 pounds tuna steaks, each about 1 inch thick
  • Vegetable oil
  • 5 tablespoons butter
  • 2 cloves garlic, minced
  • 3/4 cup onion, chopped
  • 1/2 cup freshly squeezed lemon juice
  • 2 tablespoons minced capers

METHOD

Brush the tuna steaks with oil, and broil or grill them until cooked through—about 5 minutes on each side.

With a fine grade of tuna steak, you can broil or grill the tuna for less time, making it rare or medium rare. Just be sure your boiler or grill is very hot before you start to cook.

Meanwhile, heat the butter in a frying pan and slowly sauté the garlic and onion until softened—about 5 minutes.

Stir in the lemon juice and caper, and cook for 1 minute.

Spoon the sauce over the tuna and serve immediately.

Serve 4 servings.
