Shrimp Satay with Peanut Sauce

This calls for wooden (or bamboo) skewers. If you have never used them, they really won't burn if you soak them.

  • Wooden skewers for grilling
  • 2 pounds shrimp (medium 35 - 40 count)
  • 1/3 cup peanut oil
  • 2 tablespoons curry powder

Peanut Sauce

  • 1/2 cup smooth peanut butter
  • 2 tablespoons toasted sesame oil
  • 4 tablespoons soy sauce
  • 3 tablespoon rice wine vinegar
  • 1 - 2 teaspoons sugar
  • 1 tablespoon minced ginger
  • 1 large garlic clove, minced
  • Freshly milled black pepper to taste
 

METHOD

Put skewers in water too soak. 20 minutes is sufficient.

Peanut sauce: Combine all sauce ingredients in a food processor and blend until well mixed. Set aside.

Shell and devein shrimp. Rinse well, then drain and pat dry.

With a fork, beat together the oil and curry powder. Blend well and put in shrimp. Toss to coat. When coated, thread shrimp onto wooden skewers, about 5 or 6 shrimp per skewer.

Grill over very hot grill or cook in a large, heavy skillet (cast iron works well here) about 1 - 2 minutes per side. To serve, put peanut sauce on side as a dipping sauce.

Serves: 4 to 6
